Puran poli is a traditional Indian sweet flatbread made by stuffing a mixture of cooked lentils, jaggery, and spices into a dough made of wheat flour. It is typically flavored with cardamom and served with ghee. This delicacy is popular during festivals and special occasions in India, In Maharashtra, Puran poli is specially prepared on gudi padwa.
1 Puran Making Utensil use sieve and spatula if your don't have this.

Ingredients
400gmsChickpea
2cupWheat Flour

Instructions
Wash 400 gms Chickpea thoroughly and soak it in clean water for 1 hour.
Transfer Chickpeas to pressure cooker and add 3½ cups of water. Close the cooker lid and cook it on High flame until first whistle and then 4-5 whistles on low flame and then take out from flame and let cooker cool down.
While Chickpea is cooking, take a bowl, add 2 cup Wheat Flour, 2 tsp Salt and 2 tbsp Oil mix it well. Add small amount of water and keep adding as required to make dough. Keep it for resting.
Chop or grate 500 gms Jaggery into small pieces. Take a mixer grinder container and add 2 tbsp Fennel Seeds, ½ piece Nutmeg and 15 pieces Cardamom. Grind them and make fine powder.
Now check if the cooker is cool and now sieve the water from cooked chickpea. Water can be used to prepare Aamti. Transfer chickpea to a kadhai and add Chopped Jaggery pieces. Mix thoroughly using spatula.
Put kadhai on low flame, keep stirring until the mixture is thick. Now add grinded mixture, mix it and keep cooking until the texture becomes thick.
Now using Puran making utensil make the chickpea batter soft. Transfer soft batter to a bowl.
Now it's time to make Puran Poli. I used a cotton cloth for giving shape to Puran Poli, I recommend this if you want to make thin and tasty Puran Poli.
Take a small amount of dough and double the amount of Puran. Add Puran as stuffing in dough as we make paratha, use dry flour as needed and give a round shape.
Transfer it to hot tawa for cooking. Roast first side on low flame and then roast on high and medium flame on both sides of Puran Poli. Use oil or ghee while roasting. Ghee is tastier.
Follow the same process for making all Puran Poli. Always fold into half and keep Puran Poli as they are very soft. Puran Poli is ready.

Puran Poli can be served with Ghee or Aamti or Milk or Mango Juice. It is the choice of person consuming it.
