Ugadi Pachadi is a traditional South Indian dish prepared during Ugadi, it's a new year celebrated in many parts of India with various names like Gudi Padwa in Maharashtra.It's a unique blend of six tastes - sweet, sour, bitter, salty, tangy, and spicy, symbolizing the various experiences of life.The ingredients, including jaggery, tamarind, neem flowers, mango, salt, and black pepper represent the essence of life's ups and downs.
Collect Neem flowers from neem trees, and follow the process as shown in video to separate the petals and collect them in a small bowl.
Take 1 no. Raw Mango and chop into small pieces.
Mash 100 gm Tamarind which was soaked in water then sieve it. Collect tamarind pulp in the claypot.
Add 2½ l Water in the claypot. Add 500 gms Jaggery in it. Mix it.
Now add 2 tbsp Melon Seeds, 2 tbsp Watermelon seeds, 2 tbsp Almonds, 2 tbsp Coconut, 1 tsp Black Salt, ½ tsp Black pepper, 1 tbsp Fennel Seeds, ¼ cup Neem flower petals and chopped raw mango. Mix it and leave it for 3 hours.
Ugadi pachadi is ready.
