Delight in the savoury and spicy flavours of Masala Kaju, a popular Indian snack made from cashew nuts coated in a blend of aromatic spices. Take a non-stick Pan. Add 1 tbsp Coriander Seeds, 1 tsp Sesame Seeds, 1 tsp Cumin Seeds, 3 nos Clove, 10 nos Black Pepper, 1 no Cinnamon, 1 no Star Anise, 1 no Bay Leaf, 1 tbsp Dry Coconut Powder, and 5 nos Red Chilli.
Roast it on low flame for 4-5 minutes.
Turn off the flame and remove the pan from stove. Now add ½ tsp Salt and ½ tsp Red Chilli Powder. Mix it thoroughly.
Now add 1 tsp Sugar, mix it and grind it to powder form. Masala powder is ready.
Now in the pan heat 2 tbsp Ghee and roast 500 gms Kaju / Cashew for 8-10 minutes so that they become crunchy.
Turn off the flame and transfer to a bowl. Add 3tbsp Masala powder and 2 tsp Chat Masala. Mix it thoroughly. Masala Kaju is ready.
