Til Gud Roti is a special sweet we make during a festival called Makar Sankranti or anytime you would like to eat it. To make it, we add sesame seeds (til) and jaggery (gud) to the dough. The sesame seeds give a nutty taste and a nice crunch, while the jaggery makes it a bit sweet. It's not just yummy; it's also a symbol of good things coming our way.
Take 250 gms Sesame Seeds in a cooking pan and roast on low flame. It took me 10 minutes to roast it. It can be checked by pressing a seed with fingers, if it breaks, it is roasted. Let it cool down in a plate.
Transfer a small quantity to a mixer grinder, then add a small quantity of Jaggery on top of it. Grind it to a fine powder and collect in a bowl. Repeat for all the Sesame seeds and 350 gms Jaggery. Mix them with hands gently.
Now take 2 cup Wheat Flour, 1 tsp salt, and 2 tbsp Oil in a bowl and mix them. Add small amount of water and more as required to make soft dough. Close with lid and let it rest for 15 minutes.
Now take some amount of Til gud Mixture which is required to make roti, add just 1 or 2 spoons of water and make soft dough of it. Divide them into small pieces or round shapes for stuffing inside roti.
Now its time to make til gud roti. Take small amount of dough and equal amount of til gud mixture. And as we make parathas, follow the same procedure. Make a spherical shape and using rolling board and pin give it a round shape of roti. If you like to have crunchy, make it thinner, if soft then keep it little thick.
Now roast the roti on heated tawa. Use small quantities of ghee from 10 tsp Ghee while roasting on both sides. Transfer to a container or plate. Let it cool down. Til Gud Roti is ready.

Til gud roti is one of the travelers favorite food as it stays good for long time. Til Gud mixture can be used for making laddus or can be used for making more til gud rotis.
