Rajasthani Mawa Kachori

Rajasthani Mawa Kachori is a sweet food which is juicy and yummy. It’s one of my favourite desserts. It’s an origin from Rajasthan but famous all over in India.

Ingredients
- 2 Cup White Flour
- ½ tsp Baking Powder
- ½ Cup Ghee
- ½ Cup Curd
- 2 Cup Sugar
- 1 Glass Water
- 4-5 Pieces Saffron
- 1 Cup Mawa
- ½ Cup Sugar
- ¼ tsp Cardamom Powder
Instructions
- Take a bowl and add white flour, baking powder and mix them.
- Add ghee, curd and mix all of them.
- Add small quantities of water as required and prepare a soft dough.
- Cover it and keep it aside for 15-20 minutes.
- Take a bowl and add sugar, water and heat while mixing them with the help of a spoon.
- After the sugar mixes in water, Add saffron.
- Cook until the liquid becomes slightly sticky and remove from flame. Sugar Syrup is ready.
- Take a bowl and add 1 cup mawa, sugar, cardamom powder.
- Mix them with the help of a spoon. Stuffing is ready here.
- Take the dough and make it soft gently and make small lemon size pieces out of it.
- Take a piece and form a small bowl shape of the dough for adding the stuffing.
- Add 1 tablespoon stuffing to the bowl-shaped dough and with the help of hands give a shape of small cookie covering the stuffing with the same dough.
- Prepare all the remaining pieces in the same way. Kachori is ready for frying now.
- Take a bowl and add oil in it.
- Keep the flame at low and add kachori’s in oil at low temperature.
- Fry 3-4 pieces at a time or as comfortable till the dough bulges and colour turns brown.
- Remove the fried pieces and turn off the flame so that the oil cools down.
- Fry the remaining pieces in the same way.
- Add the fried pieces into the sugar syrup for 15-20 minutes so that it absorbs the sweetness.
- Remove them on a plate.
Notes
Rajasthani Mawa kachori is ready. It can be garnished with small pieces of pistachio and almonds.
