What sets Kesar Kulfi apart is its unique preparation and the use of saffron, which imparts a beautiful golden colour and a distinct flavour to the dessert. The process begins with boiling milk until it reduces to a thick, creamy consistency. Rock Sugar is added to sweeten the milk, and ground cardamom is often used to enhance the flavour. Saffron strands are added to the mixture, infusing it with their vibrant colour and exotic aroma. The mixture is then poured into traditional kulfi moulds or small cups and frozen until firm. This slow-freezing process results in a dense and creamy texture that is characteristic of kulfi.

Beyond its delicious taste, Kesar Kulfi is cherished for its rich and indulgent nature. Milk, being the main ingredient, provides essential nutrients such as calcium and protein, making the dessert not only tasty but also somewhat nutritious.
