How to prepare healthy, high-protein almond and sattu cookies that are free from butter, ghee, or refined flour (maida). These cookies are perfect for kids and health-conscious individuals.
Ingredients Needed:
Roasted Chana (Sattu): 2 cups (ground from roasted chickpeas)
Dry Dates Powder: 1 cup
Almond Powder: 1 cup (washed, dried, and ground)
Baking Powder: 1 tsp
Coconut Cream/Butter: For binding (prepared by refrigerating coconut milk)
Cocoa Powder: 4 tbsp (optional, for flavor)
Mishri (Rock Sugar) Powder: 1/2 cup (optional, for extra sweetness)
Step-by-Step Instructions:
Prepare the Base: Remove the skin from roasted chickpeas, grind them into a powder, and measure 2 cups. Combine this with the almond powder, dry date powder, and baking powder in a bowl.
Binding: To get the coconut butter, take thick cream from chilled coconut milk. Add this gradually to the dry mix to form a dough.
Flavoring: Add cocoa powder to make the cookies more appealing to children. Adjust sweetness by adding powdered mishri if desired.
Shaping: Shape the dough into thick, round cookies and place them on a tray lined with butter paper.
Decoration & Baking: Press a whole almond on top of each cookie for a decorative finish. Preheat the oven and bake at 180°C for 25 to 30 minutes.
Cooling: Once baked, let the cookies cool down completely before storing them in an airtight container.
