Green Moong Dal Laddu

These nutritious laddus are rich in protein, fiber, and healthy fats.
Ingredients
- 400 g (2 cups) whole green moong dal
- 100 g almonds
- 1 tbsp ghee (for roasting almonds)
- Dry coconut (cut into pieces)
- 1/2 cup sesame seeds (optional)
- 1/2 cup ghee
- 300 g grated jaggery
Step 1: Roast the Moong Dal
Wash the whole green moong dal to remove any dust.
Transfer it directly to a pan.
Roast on medium heat until all the moisture evaporates.
Reduce the heat to low and continue roasting for 10–15 minutes until the dal becomes light brown and crunchy.
Allow it to cool completely.
Step 2: Roast the Almonds
Roast the almonds in a pan until the moisture evaporates.
Add 1 tbsp ghee and continue roasting until the almonds become crisp.
Let them cool completely.
Step 3: Grind the Ingredients
Grind the dry coconut and sesame seeds into a coarse mixture.
Grind the cooled roasted moong dal into a coarse powder.
Step 4: Cook the Mixture
Heat 1/2 cup ghee in a pan on low heat.
Add the moong dal powder and mix well.
Stir in the ground coconut and sesame mixture.
Roast for 5–6 minutes until the raw aroma disappears.
Step 5: Add the Jaggery
Remove the pan from the heat and let the mixture cool slightly until warm.
Add the grated jaggery and mix thoroughly. There is no need to prepare a jaggery syrup.
Step 6: Shape the Laddus
Transfer the mixture to a plate and mix well by pressing it together.
Roughly chop the roasted almonds and fold them into the mixture.
While the mixture is still warm, shape it into laddus.
Allow the laddus to cool completely before storing them in an airtight container.
