Maharashtrian Puran Poli Thali Recipe: A Traditional Festive Feast

Step-by-Step Cooking Process:
Prepare the Puran (Sweet Filling):
Soak chana dal (split chickpeas) for one hour. Pressure cook until soft with a pinch of baking soda.
Drain the water (save it for the Aamti) and cook the dal with jaggery in a pan for 20-25 minutes until thickened.
Pass the mixture through a Puran Yantra or fine sieve to get a smooth, lump-free filling. Add ground cardamom, nutmeg, and fennel for aroma.
Make the Dough:
Knead wheat flour with salt, turmeric, and oil to create a soft, pliable dough. Let it rest for at least 30 minutes.
Prepare the Aamti (Spicy Lentil Curry):
Roast onion, garlic, and dry coconut over an open flame until charred. Grind into a fine paste.
