Creamy Vegan Muskmelon Custard Recipe
This refreshing Muskmelon Custard is a perfect dairy-free summer dessert. It uses rich coconut milk, fresh muskmelon (kharbuja), and tapioca pearls (sabudana) to create a chilled, creamy treat that is both healthy and delicious.
Ingredients and Preparation Steps:
1. Prep the Bases: Soak 2 tablespoons of sabja seeds (basil seeds) in water for 15 minutes. Separately, soak 1 cup of small sabudana (tapioca pearls) for 2 hours.
2. Make Coconut Custard: In a pan, mix 4 cups of thick coconut milk, 3/4 cup mishri (rock sugar), and 1/4 cup custard powder. Whisk until smooth, then heat on medium flame while stirring constantly for 10 minutes until it thickens. Let it cool completely.
3. Process the Melon: Scoop out melon balls from half of your muskmelons. Extract the pulp from the remaining halves. Blend the pulp with the melon seed juice to create a smooth puree.
4. Cook Tapioca: Boil the soaked sabudana for 10 minutes until transparent. Drain and rinse with chilled water to remove excess starch, keeping the pearls separate.
5. Assembly: Combine the cooled coconut custard, blended melon puree, cooked sabudana, soaked sabja seeds, and half a cup of gond katira (tragacanth gum). Add the melon balls for texture and chill before serving.
Summary: This vegan custard recipe offers a cooling Ayurvedic-friendly alternative to dairy desserts. By replacing milk with coconut milk and avoiding direct boiling of custard with the melon, the recipe remains creamy and clump-free. It is an excellent summer dessert that combines hydration with high-fiber ingredients.
