This guide provides an easy way to prepare a refreshing and creamy Kaju Shake at home, inspired by popular street-style recipes. The process begins by soaking Gond Katira for 5 to 6 hours and Sabja seeds for 15 to 20 minutes, though these ingredients remain optional additions for texture and health benefits.
To prepare the base, boil half a liter of full-fat milk in a pan over medium heat. Add one-quarter cup of crushed rock sugar (mishri) and one-quarter cup of cleaned, dried cashews to the milk. Once the mixture comes to a boil, reduce the heat and simmer for 10 minutes to reduce the raw flavor. In a separate bowl, whisk together one-third cup of milk and two tablespoons of vanilla-flavored custard powder. Gradually incorporate this slurry into the simmering milk while stirring constantly to prevent sticking. Continue cooking for another 5 minutes until the mixture thickens to a smooth consistency.
Allow the custard-milk base to cool completely, ideally under a fan. Once cooled, blend the mixture with ice cubes to achieve a perfectly creamy, chilled shake. To serve, pour the shake into a glass and top with the soaked Sabja seeds and Gond Katira. Garnish with a few extra cashew pieces for added crunch and enjoy this perfect summer drink.
