Coconut Milk Fruits Jelly

Easy, vegan-friendly fruit jelly recipe made with coconut milk and China grass (agar-agar). It is a healthy, refreshing treat perfect for kids and adults alike.

Ingredients:

  • China grass: 10 grams (cut into small pieces)

  • Water: 1.5 cups (for soaking and dissolving the grass)

  • Coconut milk: 3 cups

  • Rock sugar (Mishri): 1/2 cup

  • Seasonal fruits: As per your preference (e.g., watermelon, muskmelon)

Step-by-Step Preparation:

  1. Prepare the China Grass: Cut the China grass into thin, long strips using scissors. Soak these pieces in 1.5 cups of water for about 10–15 minutes to help them dissolve faster.

  2. Prepare the Fruit Base: Arrange your chopped seasonal fruits in a serving bowl before you start boiling the jelly mixture, as the setting process happens quickly.

  3. Dissolve the China Grass: Add the soaked China grass and rock sugar to a pot. Cook on medium heat for about 10 minutes, stirring constantly until the mixture becomes slightly thick and gummy.

  4. Add Coconut Milk: Pour in the coconut milk. Do not boil the mixture after adding the coconut milk, as it may curdle. Stir well until the liquid is warm. Remove from heat and continue stirring for another 2 minutes to cool it slightly.

  5. Assemble: Strain the mixture into the fruit-filled bowl. Note that fruits placed at the bottom stay at the bottom, while those added later float near the top.

  6. Set and Chill: Cover the bowl with a wrap or plate. Refrigerate for at least 2 to 3 hours to ensure the jelly is perfectly set and chilled.

  7. Serving: Once set, invert the bowl onto a plate. The jelly should slide out easily; cut it into slices and enjoy!
