Step 1: Prepare the Aam Ras (Mango Pulp)

Select sweet, ripe mangoes and soak them in water for 30–60 minutes.

Peel the mangoes and extract the pulp.

Blend the pulp in a mixer for two 10-second pulses until smooth. Do not add water, sugar, or salt.

Refrigerate the Aam Ras for at least 1 hour before serving.

Step 2: Prepare the Puri Dough

In a bowl, combine 3 cups wheat flour, 1/2 tsp salt, and 2 tbsp powdered sugar or brown sugar.

Add 1 cup of the prepared Aam Ras and a little water, if needed, to knead a stiff dough.

Apply a little oil over the dough and let it rest for 10–15 minutes.

Step 3: Fry the Puris

Divide the dough into small balls and roll them into slightly thick discs.

Heat oil until very hot.

Fry the puris, gently pressing them with a spoon so they puff up.

Serve the hot, fluffy puris with chilled Aam Ras.
