Vegetable Daliya Upma is a beloved Indian breakfast dish renowned for its wholesome ingredients and savory flavor profile. The preparation begins with roasting daliya for 5 minutes, keeping it aside and then heating oil or ghee in a pan, infusing it with mustard seeds, cumin seeds, curry leaves, and green chili’s for an aromatic base. Following this, finely chopped onions are added and sautéed until they turn translucent.
A variety of finely diced vegetables such as beans, green peas, and tomatoes are then added to the pan. These colorful additions not only provide a visual appeal but also contribute essential nutrients, elevating the dish’s nutritional profile. The vegetables are stir-fried until they reach a delightful balance of tenderness and crunchiness, imparting a satisfying texture to the upma.
The next step involves adding broken wheat, also known as daliya, to the pan and roasting it. This toasting process enhances the wheat’s flavor and ensures a fluffy texture in the final dish. Water is then poured into the pan, covering the daliya and vegetables completely. Seasonings such as salt, turmeric powder, and optionally, red chili powder, are added to infuse the mixture with depth and complexity.
The upma is allowed to simmer over low heat, with occasional stirring to prevent sticking and ensure even cooking. As the daliya absorbs the liquid and cooks to perfection, the dish transforms into a hearty and nourishing meal option. Just before serving, the upma is garnished with freshly chopped coriander leaves and a squeeze of lemon juice which is optional, imparting a burst of freshness and tanginess to the dish.
Vegetable Daliya Upma can be enjoyed hot, either on its own or paired with accompaniments such as yogurt or pickle for added flavor. Its versatility allows for customization, with options to include protein-rich ingredients like chickpeas, tofu, or paneer cubes. Leftovers can be refrigerated and reheated for a quick and convenient meal option, making it a practical choice for busy lifestyles.
In conclusion, Vegetable Daliya Upma offers a perfect blend of taste and nutrition, making it a cherished dish in Indian households. Its wholesome ingredients, vibrant flavors, and ease of preparation ensure that it remains a favorite choice for breakfast, brunch, or light dinner, catering to diverse palates and dietary preferences.
