Ingredients
Wheat flour Pav
- 1 cup Warm Milk
- 4 tbsp Sugar
- 20 gms Active Dry yeast
- 500 gms Wheat flour
- ½ cup Milk Powder
- 1 tsp Salt
- 1 l Water Use as much required to make Dough.
- 2 tbsp Oil
- 1 tbsp Oil
Pav Bhaji
- 400 gms Potato
- 1 cup Cauliflower
- ½ cup Green Peas
- 3 nos. Onion Big Size
- 3 nos. Tomato Big Size
- 5 tbsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 12 nos. Curry Leaves
- 2 tbsp Ginger Garlic Paste
- 1 no. Capsicum Big Size
- 4 nos. Carrot
- 2 tsp Salt
- 50 gms Butter
- 2 tbsp Kashmiri Red Chilli Powder
- 1 tsp Turmeric
- 2 tbsp Coriander Powder
- ½ tsp Red Chilli Powder
- 3 tsp Pav Bhaji Masala
- 1½ cup Water
- 2 tsp Lemon
- ½ bunch Coriander Leaves
Instructions
- Take a cup, add 1 cup Warm Milk, 4 tbsp Sugar and 20 gms Active Dry yeast and mix them thoroughly.
- Take Pressure cooker, add 400 gms Potato and let whistle blow one high flame and one whistle on low flame. Turn off the flame and keep it aside.
- Take a bowl, add 500 gms Wheat flour, Dry yeast mixture of instruction no.1, ½ cup Milk Powder and 1 tsp Salt. Mix them thoroughly.
- Add 1 l Water as required and make dough as shown. Add 2 tbsp Oil and mix the dough. Add 1 tbsp Oil and mix it thoroughly.
- Take baking mold and grease it with oil. Take small dough and make spherical shape and place in baking mold as shown.
- Wrap the mold with the help of paper foil and leave it for 45 minutes.
- Take pressure cooker and boil 1 cup Cauliflower and ½ cup Green Peas for making the soft and clean. By the time fine chop, the vegetables.
- Take kadhai and heat 5 tbsp Oil, add 1 tsp Mustard Seeds and 1 tsp Cumin Seeds fry it until it sounds. Add 12 nos. Curry Leaves, 3 nos. Onion and fry until onion becomes golden color.
- Add 2 tbsp Ginger Garlic Paste and mix it for a minute. Add 1 no. Capsicum, 4 nos. Carrot, and boiled Cauliflower and Green Peas. Mix them thoroughly.
- Add 3 nos. Tomato and mix it for 3-4 minutes. Add 2 tsp Salt and mix well.
- Make a space at center and add 50 gms Butter, 2 tbsp Kashmiri Red Chilli Powder, 1 tsp Turmeric, 2 tbsp Coriander Powder, ½ tsp Red Chilli Powder and 3 tsp Pav Bhaji Masala. Mix them and mix with all the vegetables. Add smashed potatoes and mix well.
- Add 1½ cup Water and mix it well, Smash with smasher and mix well until it gets boil. Add 2 tsp Lemon and ½ bunch Coriander Leaves and mix well. Transfer it to a container.
- Now take a look at the dough which are now more than double the size. Now brush it with milk on top side. And put the molds in pre heated OTG for 30 minutes at 230℃ to bake.
- Grease it with butter on top side and leave it for 2 minutes. Cover it with a wet cotton cloth for 10 minutes and remove. Yummy and best Pav is ready.
- Cut all the pav into half and roast them on tawa with ghee on medium flame. Transfer to a plate and serve with bhaji, onions and lemon.
