Rice Kheer | How to make delicious creamy Rice kheer

Rice kheer, a beloved Indian dessert, is a creamy, fragrant rice pudding that’s cherished for its comforting flavors and rich texture. To begin, gather your ingredients: rice, whole milk, sugar, cardamom powder, chopped nuts (such as almonds, cashews, pistachios, chironji and raisins).

Start by washing the rice thoroughly under running water until the water runs clear. Then, soak the rice in water for about 20-30 minutes to soften it, which helps in cooking evenly. After soaking, drain the water.

In a heavy-bottomed pan or a deep pot, pour the whole milk and bring it to a gentle boil over medium heat. Stir frequently to prevent the milk from scorching at the bottom. Once the milk reaches a boil, add the drained rice to the pot and reduce the heat to low.

Allow the rice to simmer in the milk, stirring occasionally to prevent sticking, for about 15-20 minutes or until the rice is tender and the milk has thickened to a creamy consistency. During this time, the rice will absorb the milk and release its starch, contributing to the pudding’s creamy texture.

As the kheer cooks, add sugar according to your taste preference. Remember that the sweetness will intensify slightly as the kheer cools, so you may want to adjust accordingly.

Meanwhile, toast a handful of chopped nuts in a separate pan until they turn lightly golden and aromatic using ghee. This step intensifies their flavor and adds a delightful crunch to the creamy kheer. Once toasted, add the nuts to the simmering kheer, reserving some for garnish.

Continue to simmer the kheer until it reaches your desired consistency, ensuring that the rice is fully cooked and the milk has thickened to a creamy texture. Keep in mind that the kheer will thicken further upon cooling, so it’s okay if it seems slightly runny at this stage.

Serve the rice kheer warm or chilled, depending on your preference. It’s a versatile dessert that’s equally delicious whether enjoyed as a comforting treat on a cold evening or as a refreshing indulgence on a warm day.

With its creamy texture, fragrant aroma, and delicate flavors, rice kheer is sure to captivate your senses and leave you craving for more. Whether enjoyed on its own or paired with your favorite Indian sweets, it’s a dessert that never fails to impress.

So, gather your ingredients, set aside some time, and treat yourself to the exquisite delight of homemade rice kheer. With every spoonful, you’ll savor the richness of tradition and the warmth of culinary craftsmanship.

From its humble origins to its esteemed status as a classic Indian dessert, rice kheer embodies the essence of culinary artistry and cultural heritage. So why wait? Indulge in a bowl of creamy goodness and experience the magic of rice kheer for yourself.
