Daliya ki kheer, also known as broken wheat pudding, is a wholesome and nutritious dessert that’s perfect for satisfying your sweet cravings while also providing nourishment. Making it in a clay pot adds a rustic charm and imparts a unique earthy flavor to the kheer.
To begin, gather your ingredients: broken wheat (daliya), milk, sugar, cardamom pods, chopped nuts (such as almonds, cashews, and pistachios), raisins, and ghee (clarified butter). You’ll also need a clay pot, preferably one with a thick bottom to prevent the kheer from burning.
Start by rinsing the broken wheat under cold water to remove any impurities. Then, soak the daliya in water for about 30 minutes to soften it slightly, which will help it cook faster and more evenly. After soaking, drain the water and set the broken wheat aside.
In the clay pot, heat a small amount of ghee over low heat. Once the ghee is hot, add the drained broken wheat and sauté it gently for a few minutes until it turns golden brown and becomes fragrant. This step enhances the nutty flavor of the daliya and adds depth to the kheer.
Next, pour in the milk, making sure it covers the broken wheat completely. Allow the milk to come to a gentle simmer, stirring occasionally to prevent sticking. As the kheer cooks, the broken wheat will absorb the milk and soften, creating a creamy and luscious texture.
While the kheer simmers, add sugar according to your taste preference. Remember that the sweetness will intensify slightly as the kheer cools, so you may want to adjust accordingly. Additionally, crush a few cardamom pods to release their aromatic seeds and add them to the kheer for a delightful flavor.
As the kheer thickens and the broken wheat becomes tender, add a handful of chopped nuts and raisins to the pot, reserving some for garnish. The nuts and raisins add a wonderful texture and burst of sweetness to the kheer, elevating its taste to new heights.
Continue to simmer the kheer in the clay pot, stirring occasionally, until it reaches your desired consistency. Keep in mind that the kheer will thicken further upon cooling, so it’s okay if it seems slightly runny at this stage.
Once the daliya ki kheer is ready, turn off the heat and let it cool for a few minutes before transferring it to serving bowls or a large serving dish. Garnish the kheer with the reserved chopped nuts and raisins for a decorative touch and added crunch.
Serve the daliya ki kheer warm or chilled, depending on your preference. It’s a comforting and wholesome dessert that’s perfect for any occasion, whether enjoyed as a midday treat or a post-dinner indulgence.
With its creamy texture, fragrant aroma, and hearty flavors, Daliya ki kheer made in a clay pot is sure to delight your taste buds and leave you feeling satisfied. So why not treat yourself to this nourishing dessert and experience the wholesome goodness of homemade cooking?
