Equipment

  • 1 Peeler
  • 1 Knife
  • 1 Steel Kadhai
  • 1 Measuring Spoons
  • 1 Spatula

Ingredients
  

  • 2 no Raw mango
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • tsp Fennel Seeds
  • 1 tsp Mustard Seeds
  • 1 tsp Nigella Seeds
  • ¼ tsp fenugreek seeds
  • ¼ tsp Asafoetida
  • ½ tsp Black Salt
  • ½ tsp Turmeric Powder
  • ½ tsp Red Chilli Flakes
  • ½ tsp Salt
  • 1 tsp Coriander powder
  • 2 glass water
  • ½ cup Jaggery
  • 1 tsp Kashmiri Red Chilli Powder
  • 1 tsp Chat Masala

Instructions
 

  • Take 2 no Raw mango, wash it and then peel off the cover and using knife make medium size pieces.
  • Take a steel kadhai and heat 2 tbsp Oil for a minute then add 1 tsp Cumin Seeds, 1½ tsp Fennel Seeds, 1 tsp Mustard Seeds, 1 tsp Nigella Seeds, ¼ tsp fenugreek seeds, and ¼ tsp Asafoetida. Mix and Roast all of them for 2 minutes.
  • Now add raw mango pieces and fry for two minutes. Now add ½ tsp Black Salt, ½ tsp Turmeric Powder, ½ tsp Red Chilli Flakes, ½ tsp Salt, and 1 tsp Coriander powder. Fry for a minute on low flame.
  • Now add 2 glass water and mix it. Then add ½ cup Jaggery, 1 tsp Kashmiri Red Chilli Powder, and 1 tsp Chat Masala. Mix it and let it get a boil.
  • Now close the lid and let it cook on medium flame for 20-25 minutes so that raw mango pieces become soft, mix occasionally in between. Test it with pressing spoon on it.
  • Transfer to a container. Kairi (Kaccha Aam) ki Launji is ready.

It can be stored for up to 7days normally, while 1 month if kept in fridge. Serve with a Chapati or Roti.
