Vanilla ice cream offers the creamy texture and rich flavor. This recipe is perfect for those with dietary restrictions or preferences, yet it still delivers all the indulgence of classic vanilla ice cream.
To begin, gather your ingredients: heavy cream, whole milk, sugar, vanilla extract, and optionally, corn flour for added creaminess and texture. You’ll also need an ice cream maker to churn the mixture and achieve that signature smooth consistency.
Start by preparing the ice cream base. In a saucepan, combine the heavy cream, whole milk, and sugar over medium heat. Stir the mixture gently until the sugar dissolves and it begins to steam. This forms the creamy foundation of the ice cream.
Once the mixture is hot but not boiling, remove it from the heat and stir in the vanilla extract. This adds the classic vanilla flavor that’s synonymous with delicious ice cream.
If you prefer a slightly thicker consistency, you can add a slurry of corn flour to the mixture at this stage. Simply mix a small amount of corn flour with water to create a smooth paste, then whisk it into the hot cream mixture until well combined. This step helps to thicken the ice cream base and create a luxurious texture.
Once the base is well mixed and any additional ingredients have been added, transfer it to a heatproof bowl and let it cool to room temperature. Cover the bowl with plastic wrap and refrigerate the mixture for at least 4 hours or overnight to chill thoroughly. Chilling the base ensures that it’s cold enough for the ice cream maker and helps to develop its full flavor.
Once the base is thoroughly chilled, remove it from the refrigerator and pour it into your ice cream maker. Churn the mixture according to the manufacturer’s instructions until it thickens and reaches a soft-serve consistency.
If desired, add any mix-ins, such as chocolate chips, nuts, or fruit, during the last few minutes of churning to incorporate them evenly into the ice cream. However, classic vanilla ice cream is delicious on its own, allowing the pure flavor of vanilla to shine through.
Once the ice cream reaches the desired consistency, transfer it to a freezer-safe container and freeze it for several hours or overnight to firm up. This final step allows the ice cream to set properly and develop its full flavor and texture.
When ready to serve, scoop the vanilla ice cream into bowls or cones and enjoy it on its own or paired with your favorite desserts. Whether enjoyed on a hot summer day or as a comforting treat year-round, homemade eggless vanilla ice cream is sure to delight your taste buds and leave you craving more.
