Vegetable Diwani handi is a seasonal curry which is made during Sankranti / Bhogi festival. It's very highly nutritional as the curry consists of all vegetables.

Ingredients
  

  • 3 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • 8-10 Leaves Curry leaves
  • 2-3 No.s Long chopped Green chilli
  • 1 cup Chopped Onion
  • 1 tsp Garlic Ginger Paste
  • ¼ cup Potato
  • ¼ cup Bottle gourd
  • ¼ cup Sweet Potato
  • ¼ cup White Radish
  • ¼ cup Elephant foot Yam
  • ¼ cup Yam
  • ¼ cup Green Banana
  • ¼ cup Brinjal
  • ¼ cup Bitter Gourd
  • ¼ cup Cabbage
  • ¼ cup Carrot
  • ¼ cup Ivy gourd
  • ¼ cup Broad beans
  • ¼ cup Capsicum
  • ¼ cup Cluster beans
  • ¼ cup Beans
  • ¼ cup Beetroot
  • ¼ cup fresh Peanut
  • ¼ cup fresh Chickpea
  • ¼ cup Green peas
  • 1 tsp Salt
  • ½ tsp Turmeric Powder
  • ½ tsp Corriander powder
  • ½ tsp Garam masala
  • ½ tsp Cumin powder
  • ½ tsp Red Chilli powder
  • ½ cup Dill leaves
  • ½ cup Spinach leaves
  • ½ cup Mustard leaves
  • ½ cup Sorrel leaves
  • ½ cup Fenugreek leaves
  • ½ cup Tomato
  • ¼ cup Okra
  • ½ cup Coriander leaves

Instructions
 

  • Take a Pan, add oil and heat.
  • Add Mustard seeds, Cumin seeds, Curry Leaves, Green Chilli, Onion and Ginger Garlic Paste. Fry them for 2-3 minutes on medium flame.
  • Add Potato, Bottle Gourd, Sweet Potato, White Radish, Elephant foot yam, Yam, Green Banana and Brinjal. Mix and fry for 2-3 minutes closing the lid on medium flame.
  • Add Bitter Gourd, Cabbage, Ivy Gourd, Broad beans, Capsicum, Cluster beans, Beans and Beetroot. Mix and cook them for 2-3 minutes on medium flame.
  • Add Peanut, Chickpea and Green Peas. Mix and cook them for 1-2 minutes.
  • Low the flame. Add Salt, Turmeric, Corriander Powder, Garam masala, Cumin powder and Red Chilli powder. Mix them and cook on low flame for 1-2 Minutes.
  • Add Dill leaves, Spinach Leaves, Mustard leaves, Sorrel leaves, Fenugreek leaves. Mix and close the lid. Cook on low flame for 5-10 minutes. Mix them every 2-3 minutes.
  • Add Tomato, Okra and Corriander leaves. Mix and cook them for 10 Minutes.
  • Check if the vegetables have cooked by checking its softness. If required add little water and cook.
  • Close the lid and let it cook for 10 minutes on a low flame. Stir the curry in 2-3 minute intervals so that it doesn't stick at the bottom.
  • Turn off the flame and transfer into a bowl.
  • Diwani Handi is ready to serve.

Notes

Vegetable Diwani Handi can be served with Jowar Roti, Bajra Roti or Wheat Roti. It's very special if you can eat this while surrounding with trees like in villages fields.
