Equipment

  • Steel Kadhai
  • Spatula
  • Measuring Cups
  • Non-Stick Pan

Instructions
 

  • Wash and clean 500 gms Bitter Gourd and the slice into round pieces.
  • Remove the seeds from it. Collect in a bowl.
  • Add 2 tsp Salt, 1 tsp Turmeric Powder and 4 tsp Lemon Juice. Mix it thoroughly. Toss a little and mix it.
  • Close with lid and rest it for 30 minutes.
  • Drain the water from the bowl.
  • Now add 1 tsp Ginger Garlic Paste, 1½ tsp Coriander Powder, and 1 tsp Red Chilli Powder. Mix them together.
  • Now add ¼ cup Rice Flour and ¼ cup Besan (gram flour). Mix it well so that each piece of Bitter Gourd is having a layer of this flour.
  • In a pan heat oil and fry ¼ cup Cashews until crunchy and collect in a plate.
  • Now one by one add the coated Bitter Gourd as much as they can be easily fried for frying.
  • Fry on high flame for 5 minutes. Stir in between and turn the pieces for evenly frying.
  • Remove and collect in a plate. Repeat for all the pieces.
  • In a nonstick pan take 1 tbsp Oil and heat on low flame.
  • Add 6 nos Green Chilli and 15 nos Curry leaves. Fry them for 2 minutes or until they are crunchy.
  • Transfer them to fried bitter gourd pieces. Add Fried Cashews too.
  • Mix them all together in a plate or transferring it to a bowl. Karela Fry is ready.
